April Tea Tasting: Parameters and Paradigms

Every tea group has different brewing needs that must be met to provide a pleasant flavor and within that window, each specific tea will have a different "sweet spot" where it will perform best. Finding what parameter shifts benefit a particular batch of a certain tea is one of the fun ways to become engaged with and see different faces in an otherwise familiar tea. It is useful, though, to build an understanding of the underlying reasons to treat certain groups certain ways. We will taste a couple of teas that land in processing category gray areas to showcase how changing different brewing parameters promotes and restricts flavor characteristics and illustrate how one might approach a new tea to produce desired flavors rather than adhering to stock brewing recommendations.
